North Georgia Sorghum
A view from Brasstown Bald Mountain in Georgia, the highest mountain in the state.
A field of sorghum is ready to harvest in the shadows of Brasstown Bald Mountain. Sorghum is a grain crop from West Africa. It came to georgia in about 1844 thru Gilmer County.
These canes of sorghum are ready to be pressed into cane juice.
Olin Hugh's Sorghum Mill in Towns County Georgia, is making Sorghum Syrup in October.

The juice is run try a series of straw to filter out large particles.
The juice then in placed in the copper evaporator and allowed to thicken over time.
As the water leaves the juice it thickens into syrup.
